I'm making grilled chicken with peanut sauce and a salad. Pretty easy. You marinate pieces of chicken breast in spices; lots of them. You can also add ketchup/cane sugar/mustard/yoghurt/oils or whatever you like to the marinade. Then you make a sauce with real peanut butter, not some artificial stuff, fry some onions and garlic, add peanut butter. Then add water and spices. Worcester sauce and some soy sauces do well too in this sauce. Salt and pepper of course. Then you fry or grill the chicken and pour sauce over it. Have this with some salad and you've got a great meal. It's even paleo I think ?
P.S. if you want an actual recipe, I can do that as well, let me know.
I like your strategy.
My mom tricked me into trying liverwurst--don't do it. It's bad, horrible and terrible. Also tried limburger cheese--it's actually better than liverwurst, but that ain't saying much.
Oh, and anyone who made cracker salad would be banned from any future events involving food.

My mom and brothers love chicken livers but I can't stand liver. It's one of the few things I won't put in my mouth.
Today is beef liver day for me. (sorry for bragging)
Well I marinate my chicken in a mixture of either buttermilk or yoghurt (whatever is in the fridge) and to that I add some rice oil, not much though. Spices; paprika, chili, cumin, coriander, turmeric, cardamon. Probably a teaspoon of each (for a lb of chicken). Salt and pepper. Fresh garlic also goes in.
The peanut sauce gets the same spices but some worcester sauce and soy sauce. The sauce is made by frying some onions then garlic and adding a few big scoops of peanut butter. Then water (3-5 times the amount of peanut butter) to get it to the right 'saucy' consistency (requires stirring). Add the spices while the onion is still frying, it will add more flavor.
Grill the chicken at a high temperature, it should be almost crispy on the outside but very moist in the inside. Hot and fast.
Poor sauce on top and enjoy.

I got a couple of small Angus ribeyes..making smashed red potatoes and salad tonight. Oh and yeast rolls.

Swap out the peanut butter for almond butter, honey instead of sugar, tomato paste instead of ketchup and that's pretty paleo/primal.

Just curious, why is almond butter more paleo than peanut butter? You can get natural unadulterated peanut butter pretty easily nowadays.
Ha! I feel the same way looking at some of the folks dinner habits here.
