Here's my prediction:

Rob Simmons 43%
Linda McMahon 42%
Peter Schiff 15%

Which ballot "counts" so to say? What's the purpose behind multiple ballots?

What does that mean? Is the lowest candidate taken off the second ballot or something?

They will keep voting until someone has 50% + 1. Simmons will get it at some point.
All Schiff needs is 15% on one of the ballots. He doesn't need 15% on every ballot.
No candidate is dropped off the ballot until after the second ballot. So there are no drop offs after the first ballot.

ok so the delegates vote on the first ballot, no one is dropped, the delegates see the results of the first ballot and then vote on the second ballot, and someone is dropped? That happens until there are two left, and if one of them gets 85% then they are the nominee and there is no chance of a primary?

As soon as one of them gets 50%, they become the Party's endorsed candidate, but the FINAL nominee is not chosen until the August primary.

That is correct but not just the delegates see the results of the first ballot, everyone sees it in a roll call vote. No one is going to get 85% so don't worry about that.
