I was just looking on apmex and 1oz gold eagles were selling for $803 and 1oz maple leafs were $779. It looks like the prices have just changed slightly, but my question is why are eagles normally more expensive than maple leafs?

Wikipedia says eagles are only 0.9167 purity and maple leafs are 0.9999 purity, so what gives? Are eagles better to have for some reason?

Eagles have a few other metals in with the gold to strengthen the metal, which makes it harder to scratch up. Both the Maple Leaf and Eagle contain 1 ounce of gold, which means the Eagle is slightly larger because of the extra metal.

I think the Eagle is worth more simply because of demand. I think it's a nicer looking coin as well. I would buy either one though.

I agree. The design on the maple leaf is lame. I would buy them anyway because of the lower premium, but the Eagle is a much more attractive coin and the Buffalo is perhaps even more so.
