They send "black boxes" out to a random sample of people to hook to their TVs. The boxes call home and report what you watched. They then extrapolate those sample numbers to the population at large. I don't see why, but advertisers really buy into it.
Don't forget that even subtleties in wording and vocal inflection of the interviewer can be manipulated to give desired results. The validity of any poll can be questioned.
